All Dairy & Gluten Free!

I will be the first one to tell you that I can (and have!) eat the same thing for days and days on end. Honestly, I love food, but ever since my dairy allergy became a real problem, I’ve been less interested in whipping up fun meals. I know that’s terrible, but meal prep now requires significantly more brainpower than I usually have allotted for it. So in return, I end up sticking to what I know – scrambled eggs. ha!

Recently I’ve been really trying to make more of an effort in the meal planning department by actually making recipes (instead of fish with roasted broccoli every night), and it really has re-inspired me in the kitchen. Truth be told, there’s no reason I should be frustrated in the kitchen in the year 2019 with all of the AMAZING recipes out there. So I’ve taken it on myself to step up my game!

3 Things That Helped Me Get Re-inspired in the Kitchen:

  1. My BFF (and one of our Book Club editors!), Betsy, recently said on her instagram stories that when she’s in a cooking rut she’ll check out cookbooks at the local library. I thought that was BRILLIANT! But it also inspired me to actually pull out my cookbooks. I have so many, but never look at them.
  2. Invite people over – I love to entertain and cook dinner for friends and family. I’ve been adding dinner dates on the calendar recently and found it really helps. I always want to try a dish or meal out before I serve it to our guests, which means I have to get creative! It’s really been such a fun way to try out new recipes and an excuse to break out the good china!
  3. Recreate a dish – We have a few restaurants around town that are our go-to’s and recently I’ve been working on recreating our favorite dishes from those places! It’s a fun science project… and for the most part it’s been working out!

Okay, in all fairness, we haven’t made this one yet… but holy-moly I plan to! Just look at it!! HOW could it not be amazing?! I love all of The Roasted Root’s recipes!

  1. Yes! I’m in love with Buddha Bowls too! I love that you can incorporate whichever veggies veggies you prefer paired up with a tasty dressing like tahini!
