Easy Dinner Recipes & Ideas

All the quick and easy in the kitchen right now…

This summer we’ve been on the go so much that I’ve found myself in a bit of a weeknight dinner rut! And it’s actually not the cooking part but the clean up after a long day. Quite frankly, I just don’t want to do it! So I’ve become a master at finding easy recipes that I can make without making too much of a mess and that are EASY for busy weeknights. And with so many of you back-to-school now or soon, I thought I share a few healthy gluten- and dairy-free recipes I’ve made and loved recently.

Also, if at all possible, Ryan and I will try and prep a bit on Sunday (here’s how we do it and with a printable to help!) just to make the weekdays a bit easier, which has been a game changer. If we grill out on Sunday night (which we typically do) I’ll add a few more proteins and some veggies to the grill to eat throughout the week, which does really help keep us eating healthier.

So below are a few of my absolute favorite meals that we make time and time again. If I’m in a rut, some part of the below is 100% in my meal plan for the week.

Turkey, Green Bean & Basil Stir Fry

The Defined Dish

This recipe has only five ingredients and is truly so good. I’ve been making it weekly because it’s definitely a favorite! I typically serve it over rice and add a bit of lime as a garnish.

Baked Salmon Pesto

So this recipe is ridiculously fast and is truly incredible. It’s my go-to meal when friends are coming over because it tastes really elevated but it’s super easy! I use store-bought dairy-free pesto (this is my fave) and GF bread crumbs. I typically serve it with a salad and roasted potatoes.

I love it when we make burger bowls on Sunday evenings because we’ll always make enough to have leftovers! There’s just something about grilling out on a summer weekend night that we love. Plus, who doesn’t love a burger?!

This is another recipe that we will make on Sunday night and then do a double batch for the week. Truly this salad is amazing and a meal you will crave! So good.

This is such a simple (and fresh!) fish taco recipe that I can make with my eyes closed! And so easy to adjust for gluten- and diary-free.
