Flourless Chocolate Cake Recipe
We have been spending all of our free time lately in our backyard. Whether we’re tending to it or enjoying it, we are soaking up every second we can back here. It’s easily our favorite space and we can’t get enough.
One of our favorite things to do, especially when the sun starts to set and the heat gives up a bit, is to fire up our smoker and whip up dinner! On top of meals, lately we’ve been trying our hand at desserts.
A quick note about our grill:
We have a Traeger Eastwood 22 Series that both grills and smokes! We’ve had it about 3 months now and easily use our it 2-3 times a week – whether we’re smoking salmon for dinner, cooking homemade pizzas, or grilling veggies, it has become the most used cooking tool in our home. It’s simple to use, there’s no flame, and you control the temperature electronically. Ryan usually does the grilling, but even I feel great about doing it now. The Traeger practically does all of the work for you and we LOVE how versatile it is.


Back to desserts!
Last month we grilled peaches with vanilla ice cream (dairy free for me!) and they turned out fantastic. So this month we thought we’d try another one of Traeger’s recipes, the flourless chocolate cake…Spoiler alert… it was amazing!! One of my favorite things about Traeger is the recipe book they have online. I can’t get over all of the recipes and how they have it broken down for you by every category imaginable. When I was looking for recipes I knew I wanted to find ones that went well with our Cherry Pellets. After a little research I found this Flourless Chocolate Cake with Raspberry Sauce, and thought YES & YES.


The recipe was super easy to make and I even substituted the butter for vegan butter to make the whole thing dairy free. The cake came out perfectly and had delicious hints of smoked cherry.
I’ve loved experimenting with the Traeger and trying new recipes, especially desserts. The smoked meats and are no-brainers and always delicious, but smoking desserts… now that is fun!

Ingredients:
NONSTICK COOKING SPRAY
3 TBSP COCOA POWDER (FOR DUSTING THE PAN)
12 OZ SEMI-SWEET CHOCOLATE, SUCH AS GUITTARD, COARSELY CHOPPED OR IN SMALL PIECES
12 TBSP (1 1/2 STICKS) UNSALTED BUTTER
1/2 TSP SALT
1 TSP VANILLA EXTRACT
6 EGGS, ROOM TEMPERATURE
1 1/2 CUPS PLUS 2 TBSP GRANULATED CANE SUGAR
2 CUPS FRESH RASPBERRIES OR FROZEN RASPBERRIES, DEFROSTED
1 TSP FRESH LEMON JUICE

Oh my goodness! That looks like a must try.
That cake sounds delicious!!! I need to try it. Hopefully I can bake in a regular oven! A friend of mine recently posted a strawberry smore. Looked good but was missing chocolate. My solution? Use the new marshmallows that have the chocolate in the center! Problem solved! (I need my chocolate!!!). Love your dress! Perfect for those hot summer days! 🙂
