The Very Best Chocolate Cake Recipe
Possibly the best thing I’ve ever had…
I’ve been on a major new recipe kick over here and have been on a roll with our dinners lately, but this one takes the cake (pun intended!)! And since today is my birthday (!!!), I thought it would be fun to share the birthday cake I made for my mom on Tuesday!
First of all, let me just say that I love to bake, but my sister is the real baker in the family… I mean, she has a degree in pastry! But as luck would have it, she had a few things pop up last minute, so I thought I’d take over making the cake this year and I was kind of terrified. I can bake, but baking for my family that is used to professional grade treats from my sister felt like a big undertaking.
After one failed attempt (I literally threw an entire cake away before this one… no lie), I have to say I nailed it. So much so that my sister asked for the recipe, which was possibly the highest complement she could have ever given me!
Anyway, I thought I would share with you the best gluten- and dairy-free chocolate cake I’ve ever made with the most UNREAL (truly incredible) avocado (with no sugar!) frosting.
Gluten & Dairy Free Cake Recipe — I found this recipe on the Gluten Free Baking website and it was easy and super straight forward. I did end up subbing the milk for a cup of coffee, the oil for avocado oil, and the sugar for coconut sugar, but truly the best GF cake I’ve ever made.
Vegan Chocolate Avocado Frosting — If you do one thing this weekend, make this recipe! I had my doubts, but I was trying to find a chocolate frosting recipe that didn’t include powdered sugar… which is kind of hard, but this one from Minimalist Baker was unreal. So rich, fluffy, and satisfying without all the extra stuff. I can’t explain it, so you are just going to have to trust me. And like she says this would be so good as a fruit dip!! Like, can you even imagine strawberries in this??? WOW.
