As you probably have picked up by now if you’ve been reading for any length of time, I go all in when I like something, especially FOOD. Lest I remind you of that time we were full-time celery juicers?! ha! Anyway, I love a “food fad” and I’m all about jumping in with two feet whenever possible. Also, I know chia seed pudding was cool a few years ago and I’m totally behind the curve, but I rediscovered it and I CAN NOT QUIT.

Here’s the deal though, much like yesterday’s post about schedules, I love to make a task into a craft project, and if it feels like a craft project I’m waaaaay more apt to do it over and over again. And I’ve found a way to make chia seed pudding so freaking cute you’ll never want your fridge to be without.

Fiber + Protein = Great Snack

I must mention that chia seeds are an excellent source of fiber and protein and keep you FULL! Plus it definitely feels like eating a treat… seriously, Ryan and I can’t get enough.

I found these little mason jars (pack of 12, $8) which really make this feel more fun and fancy! I guess I could do this in water glasses too… but honestly guys, when you put them in these little jars and have them stacked on top of one another in your fridge you just feel SO put together. I mean, really. It’s almost MTV Cribs worthy.

But it when it comes to the recipe you will be shocked just how easy it is! Seriously!


Honestly guys, I can not wait for you to make this! It will be the one thing you look forward to eating each day, I promise.

Time needed: 6 hours.

Recipe: How to make Chia Seed Pudding

Pour the coconut milk into jars ( this recipe is for a single jar, repeat as needed), add in chia seeds, honey, and vanilla. Whisk WELL. The better everything is mixed, the better it will be. Put the lids on the jars and set in the fridge for at least a few hours (8-10 hours or overnight). For the best results leave over night. Then top off with berries and add scoop of almond butter.

  1. Add 1/2 cup of coconut milk to a small container

  2. 2 tbsp of Chia Seeds

  3. 1 tsp of Honey

  4. 1/8 tsp of Vanilla Extract

  5. Mix All Ingredients Well

  6. Refrigerate for 8-10 Hours (or Overnight)

  7. Top Off with Berries and Scoop of Almond Butter

  3. I LOVE Chia Seed Pudding – I seriously have it almost every day. I use 1/2 c. Organic Vanilla Coconut Milk, 2 tbsp. Chia Seeds, and top with Cinnamon + berries… but after you recommended the scoop of almond butter — GAME CHANGER!!! Oh my goodness, that is SO good!!!
