Red Pepper Hummus with Veggies

A few weeks ago we had dinner with my childhood best friend, Jillian, and her husband, Andy… and per usual, it was the best meal I’ve ever had. One of my favorite things about Jillian and Andy’s visits is that we always end up doing a BIG dinner party at her parents’ house in our hometown. Our parents also just so happen to be besties too, so it is a night that I look forward to all year. Amazing food (Joanne is a genius in the kitchen!) and my VERY favorite people. It’s always so special.

This past time, Joanne, Jillian’s mom, served up this colorful hummus appetizer while we sipped red wine and caught up on life. I was trying to save myself for the feast that I knew was right around the corner, but I HAD to just try it… and that’s where I went wrong. I couldn’t stop once I got started. I asked Joanne before we left about the appetizer and how I could recreate it, you know, since Ryan and I ate most of it, ha!

Ever since that dinner a few weeks ago, I have made a version of this deliciousness at least once a week. It’s the best Summertime healthy appetizer of all time.

Are you ready for the easiest recipe of all time?! Okay, here we go:

Ingredients:

• Red Pepper Hummus (you could make it, but why?!)
• Cucumber (diced)
• Feta Cheese
• Grape Tomatoes (diced)
• Red Onion (diced)
• Pita Chips (for dipping)
• Carrot Chips (for dipping)

Directions:

•        Pile everything on top of hummus. 

…. then drop the mic. 

Yup, that’s it. I told you, easiest recipe of all time!
