The EASIEST Summer Meal You’ll Ever Make!
Good morning and happy Friday to you! I wanted to share with you one of my favorite (and suuuper easy) Summer week night meals: Fish Tacos with Cucumber Relish and Baked Plantains. OMG. So good. Also, if you are wondering, this meal is gluten free and dairy free by accident… so if you are looking for a great GF/DF option, here it is!

Fish Tacos + Baked Plantains

Gluten Free Dairy Free Fish Taco's With Cucumber Relish + Baked Plantians

Ingredients
- FISH TACOS
- 1 tablespoon olive
- 4 6-ounce tilapia
- 1 teaspoon ground coriander, salt, and pepper
- 6 radishes, sliced
- 1 cucumber, halved and sliced
- 2 tablespoons fresh lime juice, plus lime wedges for serving
- 8 corn tortillas
- 1 avocado, sliced
- BAKED PLANTAINS
- 2 green plantains
- crushed sea salt
- coconut oil
Instructions
- FISH TACOS
- Heat grill; oil grill. Season the fish with the coriander, salt, and pepper and grill until cooked through, 1 to 2 minutes per side. Crumble into pieces.
- In a medium bowl, toss the radishes and cucumber slices with the lime juice, oil, salt, and pepper. Serve the fish in the tortillas with the cucumber relish, cilantro, avocado, and lime wedges.
- BAKED PLANTAINS
- Pre heat oven to 350. Puncture plantains and place in microwave on high for 6 mins. Wait until cool, peal, and slice (thinly). Place plantain slices on a greased pan and spray them with coconut oil, and season with sea salt. Bake until golden, about 20 mins.
