Let’s Cook! May’s Dinner Party Menu

Only the most delicious recipes for May…

When I sat down to think about the May dinner party menu I got really excited! There are so many fun reasons to entertain during the month of May… Cinco de Mayo, Mother’s Day, and Memorial Day weekend to name just a few! But, as always, any random Tuesday night will do.

I loved hearing from many of you who used the April Dinner Party Menu as inspiration for your gatherings, so I’m hoping this month’s menu plan will do the same! And PLEASE, if you make any of these or even re-create the full menu (extra credit points!!) be sure to tag me on Instagram so I can see and re-share. I’m loving seeing how you put your own special twist on this series—it’s the reason I started it!

And hopefully after reading this post you’ll feel confident to entertain… and call your nearest and dearest to get a date on the calendar for some home-cooked goodness.

P.S. As always, everything will have a gluten- and dairy-free option if it isn’t already GF/DF friendly, so you can proceed with confidence.

via Skinny Taste

Have you ever tried Skinny Taste’s Tostones?! If you haven’t, you are missing out… they are *so* good. Like ridiculously good. And if you don’t have an air fryer, make this baked version. Such a fun snack on it’s own or to add to a charcuterie board.

Stop. It. Right. Now. This looks AMAZING. I currently have a *thing* for arugula, and this one is putting me over the edge! Is it not the most beautiful salad you’ve ever seen?!

Lemon Garlic Mahi Mahi

via Chew Out Loud

This looks so good and easy! Also, is there anything better than fish with lemon and garlic?! Especially during the warm summer months the answer is NO.

*Note: Swap out the butter for vegan butter (this is my fave!) to make this dairy free.
