Good Morning and Happy Monday to you!
Here is just a peek at what I was up to this weekend”¦
Photo 1: One, two, cha cha cha!
Over the weekend, I got to finally break out my new snazzy fiesta tunic from ASOS. I love this top so much; there is nothing quite like feeling like a walking party!! Seriously, it’s like Cinco de Mayo every day over here…. which leads me to my next photo.
Photo 2: Easy, Fast, and AH-mazing Guacamole!
I love guacamole. Seriously, I can use it for every meal of the day. Breakfast? YUP! On top of a veggie, no cheese, omelet please! Lunch? YUP… holy-moly, a kale Mexican salad! Dinner? YUP! OMG have you ever had it on top of grilled Salmon?!?! Heaven. You get my point, I literally put it on everything, so it has been in my best interest to learn how to make it and make it Q-U-I-C-K! Below is my super easy, 7 ingredient, crowd-pleasing guacamole; hope you enjoy!
P.S. I never really measure out ingredients; I cook mostly to taste, so feel free to mix it up if you like more or less of something!
- 2 ripe Avocados
- 1/4 Lime (juiced)
- 1/2 tbs minced Garlic
- 1/8 cup diced Red Onion
- 1 1/2 tbs minced Cilantro
- Red Pepper Flakes (to taste)
- Cracked Sea Salt (to taste)
- Mash together first five ingredients.
- Season with red pepper flakes & cracked sea salt to taste.
- Enjoy!

Photo 3: Where’s my Best Hostess Gift (EVER!) Award?
On Sunday, I brought this little jar of goodness to my mom as a hostess gift for having us over for dinner that evening and refusing to let me bring anything! I thought fine, if you won’t let me pick up wine, bake, or bring some of my precious guacamole, I will one up you with a jar of Trader Joe’s Cookie Butter. And that my friends is how you win all the awards.
I hope your weekend was equally as lovely, but for now I am off to go get this week started! Cheers to an extra fabulous and productive week!!
