Popsicles, Please!

When summertime and the heat rolls around, I am basically craving a popsicle 100% of the time! They are the perfect way to satisfy your sweet tooth cravings while keeping you nice and cool. As much as I love buying fancy popsicles, they can usually be pretty inconvenient or expensive. With all of the yummy recipes I’ve been seeing over on Pinterest, I thought why not make our own? This way, we can have them on hand at all times at the house, especially this weekend for Memorial Day! I made these healthy fruit and yogurt pops a few summers ago, and they were such a hit! So, I’m rounding up more recipes to try below. 


Coconut lime popsicles cannot be a bad thing to make during the summer! |


Coconut Lime Popsicles

Is it just me or do these scream summer? Coconut and lime sounds like the perfect combination for hot days spent by the pool, if you ask me! I will definitely be making these soon!


1 can coconut milk

¼ cup milk

¼ cup lime juice, fresh squeezed

1 tbsp. lime zest

¼ cup unsweetened shredded coconut

1 drop green food coloring (optional)


In a blender, combine coconut milk, milk, lime juice, lime zest, and shredded coconut. If desired, add 1 drop of green food coloring. Blend on high until mixture is well-combined, about 1 minute. Distribute the popsicle mixture evenly among the 8 popsicle molds. Carefully transfer popsicle mold to freezer and freeze for 10 minutes. Insert a popsicle stick into each popsicle mold and then freeze until solid, about 2-3 hours. Enjoy!

Cold Brew Iced Mocha Pops - Need I say more?! |


Cold Brew Iced Mocha Pops

Do these even need explaining? I mean, come on. There are few things better than getting your caffeine fix from a delicious popsicle. These Cold Brew Iced Mocha Pops sound like the best idea for a mid work day pick me up!


2 cups cold brewed coffee (instructions below)

1/4 cup sweetened condensed milk (or more to taste)

8 Tbsp dark chocolate chips


To make the cold brewed coffee Put 1/2 cup of coarsely ground coffee into a French press coffee pot or large jar. Add 2 cups filtered water and stir. Cover and let sit for 12 hours. Then depress the plunger in the French press, or strain the coffee through cheesecloth or coffee filters.Put 1 tablespoon of chocolate chips in the bottom of 8 popsicles molds. Mix the condensed milk with the coffee, and fill each mold to the top.Cover top of mold tightly with foil and insert the sticks. Freeze until solid.To remove the popsicles, fill the sink with hot tap water and immerse the mold up to, but not over, the top lip for a few seconds and pull out the pops. If they still won’t budge, immerse for a few seconds longer. Don’t leave the mold in the hot water too long or the popsicles will start to melt!

Blueberry lemon popsicles are a delicious fruity treat for summer! |


Blueberry Lemon Popsicles

This fruity popsicle flavor sounds so delicious and refreshing! The recipe seems super simple, and I know this would definitely be a fan favorite! I am dying to try this one ASAP.


30 blueberries, hulled and cleaned

Zest of 1 lemon

1 Cup (8oz/225g) Vanilla Yogurt (or add some vanilla to plain yogurt)


Puree the blueberries until smooth. Mix in the lemon zest. Alternate adding the blueberry puree and yogurt into popsicle molds. Cover mold, add sticks and freeze for at least 6 hours or overnight.

Lavender Lemonade Popsicles - These sound ALMOST too good to eat! |


Lavender Lemonade Popsicles

Lavender anything has my attention, but add lemonade, and put it in popsicle form? Yes, please! I could probably have a million of these. I’m sure you and all of your girlfriends would love this recipe!


4 cups water

1/4 cup culinary lavender

1/3 cup sugar

Juice of 2 large lemons


Boil water (I just use a small pan) and steep the lavender in it for 10 minutes (I use 2 paper tea filters to make this easy. You could use a fine sieve or other kind of tea strainer as well). Meanwhile, juice the lemons. Once lavender has finished steeping in the water, remove the lavender and stir in the sugar and lemon juice until sugar is dissolved. Pour the mixture into the popsicle mold, leaving a little bit of room at the top of each compartment. You’ll likely find it difficult to insert the sticks right away (especially if they’re wooden sticks), so wait 2-3 hours and insert them then. Freeze popsicles for at least another 4 hours (or overnight). To remove the popsicles from the mold, I fill the sink with hot water and dunk the frozen part in it for about 10 seconds so they release easily. I recommend storing the popsicles in a large Ziploc rather than keeping them in the mold.

Sweet Tea Popsicles are every southerner's dream for the summer! |


Sweet Tea Popsicles

I wouldn’t have thought sweet tea could get any better, but I think it just did. Sweet Tea Popsicles sound like what southern dreams are made of. I never would have come up with this idea for popsicles, but I LOVE it! Can you say backyard barbecue?


1/2 cup granulated sugar


4 to 5 tea bags

fresh fruit




In a medium saucepan, combine 1/2 cup sugar with 1/2 cup water. Bring to a simmer, over low heat, and cook until the sugar has completely dissolved. Remove from heat and set off to the side to cool until room temperature. In a large pitcher, combine 4 to 5 cups boiling water with 4 to 5 black tea bags. Stir and let cool to room temperature. Once cooled, stir in as much simple syrup as you’d like. Pour the tea into a popsicle mold, leaving a little bit of space on the top for expanding during freezing. Place the lid on and stick in the popsicles sticks. Freeze for about 4 hours or over night. Run the bottom of the popsicles under warm running water to make it easier when removing the popsicles.

Basil Mint Citrus Mojito Popsicles would be perfect to bring to a Memorial Day party! |


Basil Mint Citrus Mojito Popsicles

These Boozy pops sound AMAZING! I love a good mojito, so add a popsicle, and I am your gal! I feel like these would be perfect for the upcoming holiday weekend, I want to make these so bad!


12 fresh mint leaves

12 fresh basil leaves

1 1/2 C fresh squeezed orange juice (3-5 oranges depending on how big they are; I ended up using 4)

2 T lemon juice (1 lemon, if you want fresh squeezed juice)

2 T lime juice (1 lime, if you want fresh squeezed juice)

2 1/2 T sugar

1 C crushed ice

2 T rum (optional)


Start by juicing your citrus. It takes a little more effort than just buying a carton of OJ, but the fresh squeezed taste is so worth it! Add all of the ingredients to your blender and blend until combined. It might get a bit frothy as you blend, but don”™t worry about it. As you pour the mixture into the popsicle molds, be careful not to pour too much froth along with the liquid, otherwise you”™ll end up with an air-filled popsicle once it”™s frozen! You can clip your popsicle sticks with mini clothespins or paperclips to help keep them from sinking down to the bottom of the molds while they freeze! Once they”™re frozen solid, run some water over the outside of the mold and the popsicles will slide right out!
