Easy GF/DF Lunch
Quinoa Bowls, GF/DF and SO. GOOD.
Lunch, in my opinion, is the least fun meal of the day. Unless I’m doing it up big and having a “Ladies Who Lunch” afternoon, it’s typically just purely a working lunch. And since I can’t have gluten or dairy, a quick and easy lunch between emails and meetings can become tricky! Especially since I have to make most things from scratch. So when I find a meal that just works, I commit to it. And this meal is something I make 2-4 times a week. It’s easy, filling, packed with nutrients, and it’s just plain good!
I thought I’d share this one with you, because I know most of us are looking for quick, easy, healthy lunches that we don’t have to really think about, and I promise you will love this one!
Path of Life Quinoa Bags
A few years ago, I found these Path of Life Quinoa Bags (I buy mine at Publix, but I’ve seen them everywhere!) and, quite frankly, they have changed my life. I practically buy them in bulk now. They come in a TON of different varieties and trust me, they are all good. I use these quinoa bags as my base.
I’ll just throw one of these bags into my Our Place Pan (it’s the best pan!) on medium heat, and just start adding in whatever I have in the fridge to jazz it up!
Veggies and Beans
- Greens (kale or spinach)
- Veggies (whatever I have on hand, like these butterquash noodles!)
- Beans (kidney, black, navy, white… again, whatever.)
Protein, Fat, and Garnish
- Protein (ground or grilled chicken, fried eggs, baked salmon, etc.)
- Onions (I’m obsessed with green onions!)
- Flaky Sea Salt
As you can see, there is a LOT you can do with this meal! I just buy all the things that look really good in the produce section once a week, add a handful of proteins and boom. I’ve got veggie-packed lunches all week long. It truly is THE BEST.
Also, this feels wildly similar to what my mom called “clean out the fridge soup” that she’d make at least once a week that I never looked forward to and vowed to never eat again once I was a grown up. But here I am… sharing my very own, “clean out the fridge” recipe, feeling very humbled by the situation. Full circle moment. Sorry mom, you were right, this really *is* a good way to get all of your veggies in….and I love you.
