The Best Kale Salad
Just a Girl and Her Kale Salad
I know what you are thinking, “what a crazy photo?” But honestly you’d laugh out loud with how many photos I have *exactly* like it on my camera roll. I’ve taken this same photo a million times to text to friends or family member to say “I’m on my way, and don’t worry… I’ve got the salad!”.
This kale salad is kind of my thing and my go-to for most events… I can also make it with my eyes closed. And y’all SO. GOOD. It’s truly the thing I get asked to bring. Most people have a famous pie or cookie, but I have a famous kale salad.
But I can’t take all of the credit for making it up, I feel like it’s a combination of a few different recipes I’ve made along the way. But I will say the secret to this salad is to massage the kale with the dressing and let it sit for a least 15 mintues before serving. Makes a MASSIVE difference. DO. NOT. Serve this salad without massaging the kale. It will just be sad. Also, the other secret to this salad is the dressing. Shallots make everything better…. they just do.
Anyway, let’s get to the recipe shall we?!
The Best Summer Kale Salad:
- 1 bag of chopped kale (your produce section usually has 1-2 brands)
- 1 bag of unsweetened dried cranberries
- 1/4 cup of sunflower seeds
- crispy bacon, chopped
- 1/4 red onion, chopped
- 1 avocado, diced
*depending on how much dressing you like, feel free to double this!
- 1/4 cup olive oil (or avocado oil)
- 1 full lemon, squeezed
- 1 tbs shallots, diced
- 1 tsp garlic, minced
- 1 tbs dijion mustard
- slat & pepper
Mix together the dressing and massage it into kale. Set aside for at least 15 minutes. Then top with the salad ingredients and serve!
